I get asked about my Baking all the time ... and one of my favourite things to bake is certainly vanilla biscuits . I love mine soft , golden and smooth in texture and these biscuits are all of these and I have not met a person who does not love these.
Ingredients
250 grams plain flour
100 grams unsalted butter
100 grams caster sugar {although this can be swapped for soft brown sugar if you prefer}
1 medium sized egg
tsp vanilla extract
method
*remember to preheat your oven to 180 degrees fan*
---Start by combining the butter and sugar together in a large bowl , rubbing the flour and butter together with your finger tips until they become like fine breadcrumbs. - tip : make sure the butter is hard and cold before you start to prevent the mixture from melting and becoming a mush-
---Mix in the sugar with a wooden spoon and then add the egg and vanilla extract . Work the dough with your hands until it combines to make a soft and smooth dough that is not lumpy
---chill in the fridge for about 30 mins or divide into 2 balls and chill for 15 mins . Roll out your dough onto a a floured work surface or onto a large piece of clingfilm until your dough is flat and approximately 1cm thick.
--- cut out into shapes with a cookie cutter and lay onto a baking tray a good distance apart so they don't spread into each other . Before baking place the baking tray with the cookies on in the fridge for 30 mins to prevent the biscuits spreading in the oven.
---take the biscuits out of the fridge and place on the middle layer of the oven and bake for 10-12 mins until they are golden brown around the edges.
---take the biscuits out of the oven and let them cool for 10 mins on a the baking tray before transferring them to a cooling rack.
---decorate in anyway that you would like! you could sandwich two together with buttercream or pipe on top with colourful royal icing. Let your creativity run wild !
